Ingredients
1 pound of Fair Trade Organic Dark Chocolate, chopped or you can use chips
1 cup organic heavy cream
1 tbsp prepared espresso or coffee
1 tsp vanilla extract
1 cup of personalizing ingredient for a final roll such as powered sugar, cocoa powder, nuts, coconut flakes, or sprinkles
How To Make Chocolate Truffles
Pour the heavy cream into a sauce pan and warm over medium heat until it just starts to simmer.
While cream is warming, place the chopped chocolate in a microwave safe mixing bowl and microwave for 45 seconds.
When cream begins to simmer, remove from heat and pour over the warmed chopped chocolate.
Use a spatula and stir until smooth and creamy. (If there are still any chocolate chunks, you can alway put it back in the microwave for another 30 seconds.)
Add in the coffee and vanilla and stir until mixed and smooth.
Pour the chocolate mixture into a baking pan and place in the refrigerator to cool for 1 hour.
Remove the chocolate pan from the refrigerator. Use a melon ball scooper, or a teaspoon and shaping with your hands if needed, to place round chocolate truffle balls onto a baking sheet lined with parchment paper.
Refrigerate baking sheet with chocolate truffles for another 30 minutes and remove. Improve shape of truffles if necessary by rolling in hands.
Roll each chocolate truffle in a final personalizing ingredient of your choice.
